RESTAURANT
MANAGER



Responsibility



1.    
Ensure that services in the outlet are consistent and adhere to
established standards, with class and style. 
Revise standards, if necessary, to ensure the most appropriate service
is maintained.  Contribute to the
training of associates in quality service.



2.     Presence during designated operating hours of the outlet to
provide direct supervision and immediate assistance to his/her staff and
guests.  Ensure that adequate supervision
is provided for in his/her absence. He/she will not take day off together with
his/her immediate assistant or his outlet's Sous Chef.



3.     Ensure all staff
including casuals are properly groomed according to hotel standards at all
times.



4.     Attend to operational
problems and needs brought to attention by your outlets' staff; attend guest
complaints, inquiries and requests; answer correspondence. Communicate to AVP F
& B, EM F & B on duty for any VIP's presence, including hotel owners
and executives.



5.     Ensure that
the outlet is kept in a neat and tidy manner, and that all machinery, furniture
& fixtures are in proper working order, and are maintained in a clean and
hygienic state. A
lso ensure that operating equipment used by the outlet are sufficient to
the business level.



6.     Take full
responsibility for general store-keeping and stock control of all materials,
consumables, and sales items.



7.    
Maximize business and profitability of the
outlet through aggressive promotional activities and controlling operating
costs.



8.     Keep abreast of market
condition and competitor's activities to advise EM F & B Operations on
formulating business strategies in maximizing revenues and profitability of the
outlet. Bring in best practices from competitors or other non-competitors for
product or service enhancement



9.     Ensure appropriate staffing and productivity in the outlet by
managing human resources activities such as recruitment, induction, and
performance appraisal, coaching, counseling and disciplining, to lead a highly
motivated team of people etc.



10.  Provide frameworks and ideas for promotions and create a road map
for yearly promotions.



11. 
Participate in
pricing policy formulation when changing menu, by taking into consideration of
local requirements, market demands, competition, trends, recipes, potential
costs, availability of materials, merchandising & promotion.



12.  Encouraged to cultivate relationships with other Hotels/F&B outlets,
and join any relevant Associations or clubs that will provide market
intelligence.  Manager is encouraged to
keep in contact with competitors to be knowledgeable on new products, best
practices and service excellence.



13.  Prepare and
accountable for the accuracy of budget, reforecast and outlook of the outlet to
a +/-5%.
Ensure Manpower and Expenditure
Planning is accurate and adequate for business.



14. 
Maintain and retain an effective service
workforce by providing a pleasant work environment, teambuilding, provision of
optimal staffing level and providing appropriate training and development of
associates, in co-ordination with the Human Resources Department.



15. 
Accountable for
workplace safety in the outlet.  Enforce
workplace safety procedures are briefed at the associates' departmental
orientation to avoid accidents. Be sensitive to potential safety hazards in the
outlet and take immediate corrective actions to avoid potential accidents,
including presence of clear fire exits.



16.  Fully aware of policies and procedures for emergencies such as
Fire and First Aid.



17. 
Ensure adherence to all licensing, health and
Mandatory regulations.



18. 
Attend F & B meetings to update on current
activities and bring up issues shared by all outlets.



19. 
Perform other tasks and
duties as assigned by the supervisor from time to time if necessary



 



Requirement



1.     have an exceptional
background with previous experience in 5 star hotels



2.     have superb written
& spoken communication skills



3.     have a good knowledge of
wine



4.     have outstanding food
& beverage service skills



5.     have experience in
training and supervision of restaurant service staff.



6.     have hands on experience
planning & executing large prestige events



7.     have excellent
presentation and love interaction with guests, young or old.



8.     be energetic, youthful,
comfortable working with an international team



9.     have a  "hands on" approach – this is not an office
based position



10.  have brilliant
administrative skills as well as 
creative flair.
